Moroccan Tagine with Dried Apricots

 Here's a simple recipe for preparing a Moroccan tagine with dried apricots:

Ingredients

  • For the Tagine:
    • 2 lbs (900g) meat (lamb, chicken, or beef), cut into chunks
    • 2 tablespoons olive oil
    • 1 large onion, finely chopped
    • 3 garlic cloves, minced
    • 1 teaspoon ground cumin
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground ginger
    • 1 teaspoon turmeric
    • Salt and pepper, to taste
    • 1 can (14 oz) diced tomatoes, drained
    • 1 cup dried apricots, chopped
    • 1 cup chicken or vegetable broth
    • 1 cup almonds, toasted (optional)
    • Fresh cilantro or parsley, for garnish

Instructions

  1. Sauté the Aromatics:

    • In a tagine or a large pot, heat the olive oil over medium heat.
    • Add the chopped onion and cook until softened (about 5 minutes).
    • Stir in the minced garlic and cook for another minute.
  2. Brown the Meat:

    • Add the meat to the pot, browning it on all sides.
    • Season with salt, pepper, cumin, cinnamon, ginger, and turmeric.
  3. Add Tomatoes and Broth:

    • Stir in the drained diced tomatoes and the broth.
    • Bring to a simmer, then reduce heat to low.
  4. Add Dried Apricots:

    • Add the chopped dried apricots and stir to combine.
    • Cover the tagine and let it cook for about 1.5 to 2 hours, or until the meat is tender. Stir occasionally and add more broth if needed.
  5. Finish and Serve:

    • If using, stir in toasted almonds just before serving.
    • Garnish with fresh cilantro or parsley.
  6. Serve:

    • Serve the tagine hot, traditionally with couscous or crusty bread.
