Instructions
1. Prepare the Pie Crust
- Mix Dry Ingredients: In a large bowl, combine the flour, salt, and sugar.
- Cut in Butter: Add the chilled, diced butter. Use a pastry cutter or your fingers to mix until it resembles coarse crumbs.
- Add Water: Gradually add ice water, mixing until the dough comes together. Don’t overwork it.
- Chill: Divide the dough into two disks, wrap in plastic, and refrigerate for at least 1 hour.
2. Prepare the Filling
- Prepare the Fruit: Wash, peel (if necessary), and slice the fruit into even pieces.
- Mix Ingredients: In a bowl, combine the fruit, sugar, cornstarch, vanilla extract, cinnamon, and lemon juice. Toss gently until the fruit is coated.
3. Assemble the Pie
- Preheat Oven: Preheat your oven to 425°F (220°C).
- Roll Out Dough: On a floured surface, roll out one disk of dough to fit your pie pan. Place it in the pan and trim the edges.
- Add Filling: Pour the fruit mixture into the crust, spreading it evenly.
- Top Crust: Roll out the second disk of dough and place it over the filling. Trim and seal the edges, then cut slits in the top for steam to escape.

4. Bake the Pie
