Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  2. Mix Wet Ingredients: In another bowl, combine the milk, egg, melted butter, and vanilla extract (if using). Whisk until well combined.

  3. Combine: Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay.

  4. Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. You can lightly grease it with butter or oil if desired.

  5. Cook the Pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
