Ingredients

  • For the Chicken:

    • 1 whole chicken (about 4-5 lbs)
    • 2 tablespoons olive oil
    • 1 teaspoon salt
    • 1 teaspoon black pepper
    • 1 teaspoon paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 lemon, halved
    • Fresh herbs (such as rosemary or thyme)
  • For the Almonds:

    • 1 cup sliced almonds
    • 2 tablespoons butter
    • 1 tablespoon honey (optional)
    • Salt, to taste

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken:

    • Pat the chicken dry with paper towels.
    • Rub the olive oil all over the chicken, then season with salt, pepper, paprika, garlic powder, and onion powder.
    • Stuff the cavity with lemon halves and fresh herbs.
  3. Roast the Chicken:

    • Place the chicken in a roasting pan, breast side up.
    • Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C). Baste the chicken with its juices halfway through cooking.
  4. Prepare the Almonds:

    • While the chicken is roasting, melt the butter in a skillet over medium heat.
    • Add the sliced almonds and sauté until golden brown, about 5-7 minutes. Stir in honey if using and season with a pinch of salt.
  5. Finish and Serve:

    • Once the chicken is done, remove it from the oven and let it rest for about 10-15 minutes before carving.
